Traditional Egyptian Okra
Sauté onions and garlic in vegetable oil for 2-3 minutes or until yellowed and aromatic. If you’re eliminating oil entirely from your diet, you can swirl onions and garlic in some water instead.
Add tomato juice, salt and spices bring to a boil.
Simmer sauce for 5 minutes, then add okra and bring to a boil.
Turn down the heat to low and simmer for 20 minutes.
Serve with white rice or toasted pita bread and lemon wedges.
Okra - 1/2 kilo or 1 frozen bag
Large Onion - 1 chopped
Garlic - 3 cloves crushed
Vegetable Oil - 1 tbsp (max 2 tbsp)
Tomato juice/sauce - 1-1/2 cup
A pinch of cinnamon and all spice
Salt and pepper to taste
