Spinach with Mushrooms and Cream


Serves: 4-6


  • 1tbs olive oil  

  •  1 large onion  

  • 2 garlic cloves

  • 1/2tsp turmeric  

  • 1/2tsp cumin  

  • 1/2tsp ground coriander  

  • 200g mushrooms sliced

  • 500g fresh spinach 

  • sea salt, pepper  

  • 1/2cup coconut milk  

  • 1tbs Cashew Cream  


  1. Heat the oil in a saucepan, sauté the onions and garlic.

  2. Add the spices and sauté until fragrant.

  3. Add the mushrooms and sauté for 5 minutes.

  4. Add the spinach and let it wilt, then add coconut milk and cream and season with salt and pepper to taste.

  5. Simmer for few minutes and turn off the heat.

  6. Serve it with rice or lentils.
